Raspberry macarons

Very quick post in my effort to try a post a day in November.

I have posted on my passion for baking macarons before. My foolproof Italian meringue recipe was one of my first posts and is here.

Having recently discovered freeze dried fruit, I have been experimenting with macaron shells and fillings. I filled the raspberry ones with a white chocolate ganache.

I have never made just one batch of macarons, well, once you have everything in place you might as well vary the colours! So I tried out the freeze dried pumpkin and added a little orange colouring. I filled these with Biscoff and mascarpone- a totally delicious mix- try it and tell me what you think.
