Whole orange and lemon cake

This easy cake is quite perfect, no flour, no butter, good enough for a posh dinner or just a tea time treat. Thermomix EDC has it's own version, but I adapted Fiona Cairns version for my TM version.

You'll need

  • About 400g citrus fruit
  • 4eggs
  • 220g caster sugar
  • 250g ground almonds (almond meal) if using whole almonds, grind sp9 10seconds
  • 1 tsp baking powder
  • 1/2tsp salt

Put the whole fruit into the TM basket with 1 litre of water and cook 45 minutes varoma, sp3. Set fruit aside to cool.

Mix cooled fruit, sugar, ground almonds, eggs, baking powder, salt 20 seconds, sp7

Pour into prepared tin, I used a 33cmx9cm loaf tin. You can of course use a 20cm cake pan.

Bake for about 50 minutes 170°C/375°F. I baked in lower, baking oven aga.

Spread sieved marmalade glaze on the warm cake:

5 tbsp (75g) marmalade, warmed and pushed through a sieve.

Make the candied orange while the cake is baking:

thinly slice an orange and cook in a sugar syrup over of 50g sugar and 50ml water. Don't miss this part- it really is the icing on the cake!
