Hemp seed and oatmeal cookies

baking, cookies, thermomix, Uncategorized
I have just discovered hulled hemp seed. I thought hemp was only used in the making of fabric- silly me! Anyway- reading from the label- “hulled hemp seed is a good source of protein and contains all of the essential amino acid” so now you know 🙂 I thought I'd start with the cookie recipe on the packet so all I've done is convert to metric for the Thermomix, but it's so simple you needn't dirty the TM bowl. They did spread a lot while baking and I ended up using a cutter when they were baked to pretty them up. I would bake as a tray bake in future and just cut into squares.

hemp seed cookies

  • Servings: 12-14
  • Difficulty: easy
  • Print

Preheat oven to 175°C/350°F
Line a baking sheet with parchment if forming separate balls, or line a small tray bake pan.
  • 75g unsalted butter
  • 110g brown sugar
  • 60g hulled hemp seed
  • 1 large egg
  • 1 tsp vanilla extract
  • 90g plain/unbleached flour
  • 1 tsp bicarb of soda
  • 90g rolled oats

Cream the butter and sugar, add egg and vanilla extract. Add all the dry ingredients until thoroughly combined. Either form into balls (warning- it is a very sticky mixture) should make 12-16 balls OR spread in a small pan and cut later.
Bake for 15minutes 375°/180°C

Healthy and yummy. Substitute plain flour for and alternative if like.

Welcome to my blog! After a L O N G break from blogging during which Instagram (vannilla)took over my life, I am returning in a more varied format. Yes, I will bake and have been a Thermomix users from the days before it was cult-like. I'll share the best but I will also include that other hobby in my life, photography from my small island and beyond. If you like what you see, I'd love to hear from you! Anne
