  • 170g dried fruit- I used 50/50 craisins and sultanas
  • 50g Orange juice
  • 25g Orange rind
  • 200g almond milk
  • 15g dry yeast
  • 500g strong bread flour
  • 2 tsp salt
  • 70g butter
  • 45g sugar
  • 1egg
  • 4/5 tsp mixed spice OR10g ground cinnamon10g ground nutmeg5 g ground cloves


Soak the dried fruit in Orange juice for 15 minutes

Grind the Orange rind speed 10 until pulverised.

Heat milk at 37° until temperature reached

Add yeast and mix sp2 for a few seconds

Add flour, salt, butter, sugar, egg and spices and combine sp6 before kneading on dough setting for 3 minutes.

Add soaked dried fruit and mix sp5 for 10 seconds.

Leave to rise in TM bowl or tip into a bowl until doubled in size – approx 1 hour

Tip out and shape into rolls. This will make 20 smallish buns if you want bigger then divide accordingly.

Place buns close together in a baking tray and leave to rise for approx 30 minutes.

Preheat oven to 220°C while they are rising a second time.

Mix 80g plain flour with a pinch of salt, 1 tsp olive oil, and 100g water. Pop this smooth mix into a piping bag.

Pipe a cross on to each bun using a piping bag- take care to cut a very small hole as the mixture spreads, so for a well defined cross don't overdo it.


Bake the buns for 15 minutes in preheated oven.

Glaze the buns while still warm from oven with an sieved apricot glaze.
