And so to D for date bites – the perfect healthy snack. These little beauties are very morish and they cease to be healthy if you eat them all in one go. You can find the recipe here date bites | vannillarock

D is also for dolce de leche and whilst you can of course buy this straight off the supermarket shelf, you can make it from scratch following this recipe.

 

For the dolce de leche (literal translation sweet milk for a reason) you’ll need
  • 1 litre full cream milk
  • 200ml cream
  • 125g soft brown sugar
  • 120g granulated sugar
  • ½ tsp bicarbonate of soda
  • Scraped vanilla pod (or 1 tsp vanilla bean paste)

This method is for the Thermomix (alternatively you are a slaveto the stove top)

Tip all the ingredients into the TM bowl and cook for 50 minutes, varoma, sp5.

Replace the MC with the steaming basket as this allows all the evaporation to happen and avoids nasty spitting. Now you have an hour to yourself. The mixture won’t darken until very close to end of cooking time and if you have been standing over it 😦it will start to sound different.

Tip the mixture into a jar(s) to cool and thicken. If for any reason you think it needs ten minutes longer, go for it. The teaspoon test is pretty true. I am guessing that the timing might be less with the new model given that temperature is higher so just pay attention in the last 10 minutes.
