chunky guacamole

Fresh coriander

2 green chillies, deseeded

1 clove garlic, peeled

100g onions

1 tomato

The 450g ripe (but not too soft) avocado

40g lemon juice

1 tsp coarse sea salt

1 55g pack cooked crispy streaky bacon. If you live in US your bacon does cook up to be crispy and crumbly but in UK it's better to buy the precook ex version from M&s chiller.



Chop a handful of handful of coriander leaves in TM bowl sp 5, 3 seconds

Add chillies, garlic, onion and tomato- chop sp 5, 5 seconds. Tip out and set aside.

Add avocados, lemon juice and salt to TM bowl and chop sp 4, 5 seconds

Add the onion mix to the avocados and mix reverse action action blade 10 seconds, speed 3. If it still too chunky for your taste give it a couple of seconds sp 3 without reverse action.

Stir in crumbled dry bacon pieces, if using.

Serve in a pretty serving bowl, spread as the base of quesadillas or just eat with a spoon.

The original recipe comes from Thermomix my way of cooking where they suggest popping the avocado seeds into the centre of the prepared dip to prevent discolouring. To be honest it wasn't hanging around long enough after making to discolour! Don't forget the crispy bacon.
