175g unsalted butter, melted
2 beaten eggs
1 tablespoon yogurt
275g self raising flour
1 tsp salt
50 g crispy streaky bacon ( I used the yummy precook end crispy bacon from the chiller, but you can cook your own.)
125 g grated cheese ( I used Gruyere
20g chives, chopped
Cherry tomatoes ( I used chopped sundried tomatoes in olive oil)
Preheat oven to 190°C/380°F
Set muffin cases into muffin tins
I made mine in the Thermomix, grating cheese and chopping chives first, and setting aside.
Melt butter at 50° in TM bowl or in a saucepan, allow to cool
Beat the butter, eggs, yogurt and milk sp 4
Add the flour, salt, crispy bacon, grated cheese and chopped chives.
Divide evenly between the 12 muffin cases
Top with sliced cherry tomatoes
Bake in preheated oven for 25 minutes or until skewer comes out clean.

This is perfect for brunch and picnics. If you are baking in advance you can refresh with a couple of seconds in the microwave.
